  2. Heat the oil in a large non-stick pan over medium heat. Saute onion, red bell pepper and ginger until softened, a few minutes.
  3. Add garlic and red pepper flakes, mix well and cook 1 minute.
  4. Add sliced bok choy and mushrooms, mix well, cook one minute.
  5. Add soy sauce, soaked noodles and about 3/4 cup of stock. (Save the rest to use if needed.) - Mix well, cover and reduce heat. Cook for a few minutes - noodles will absorb stock.
  6. Add shrimp, mix well, adding more stock if needed.
  7. Cover and cook until shrimp are done (turn pink), about 3 minutes. - Serve with lemon wedges. Enjoy!
